Marci's Latkes


5 Lbs of Idaho Potatoes

3 lbs of Yellow Onions

5 Large Eggs

1 T Salt

1 t pepper

Vegetable Oil


Wash potatoes well. Peel the onions. Shred the potatoes and onions using a food processor. Add eggs, salt and pepper and mix very well. Place batter in a strainer over a bowl. Heat oil until a drop of batter sizzles. Use large spoon or hands to drop batter in hot oil. Flip them periodically, cooking until browned. Once cooked, layer them on sheet lined with paper towels. Serve with apple sauce, while warm.
