Mango Avocado Salad
Ingredients:
2 Mangos, cubed
2 Avocados, cubed
1 Bag Lettuce
1/2 C Sliced Almonds
1 T Sugar
Dressing:
2 t Apple Cider Vinegar
1/4 C Oil
1 T Mustard
1/4 C Mayonnaise
1/4 C Honey
Directions:
Cut up Mangos and Avocados. Mix with lettuce.
Caramelize almonds by heating them in sugar in a pan until light brown. Stir continuously to prevent burning.
Mix dressing ingredients in jar or covered container. Shake well.
Immediately before serving in large bowl, combine salad, almonds and dressing and toss.
You can substitute the mango for a can of mandarin oranges for a different taste
