Sweet Potato Pie With Marshmallows
Ingredients:
2 cups sweet potatoes, mashed
3 t cinnamon
2 t powdered ginger
2 T Vanilla
1/2 t salt
3/4 C Light Brown Sugar
1C Non-dairy Creamer or Unsweetened Almond Milk
2 T Margarine, melted
3 eggs beaten
2 9-in gram cracker pie shell
12 large marshmallows
Directions:
Pre-heat oven to 450°,
Boil potatoes until soft. Peel skin off and mash. Pour all liquid ingredients into a blender, and then add dry ingredients. Blend until even consistency.
Pour half the batter into each pie crust and bake at 450° for 10 min, then reduce heat to 350 for 45 min. 10 min before done add half the marshmallows to the top of each pie in a circular pattern.
