Fruit Tart
Ingredients:
1 cup of Gluten free flour or regular flour
1 tbsp sugar,
¼ cup + 2 tbsp of vegetable oil
1 tbsp white vinegar
3 cups blueberries
¼ cup sugar
2 tbsp flour
dash of cinnamon,
dash of lemon juice
INSTRUCTIONS:
Preheat oven to 400° F.
Make crust:
Mix and make into a ball of dough. put into a greased tart pan or tin and press out until dough covers part way up the sides of the pan.
In a mixing bowl add 3 cup of berries with sugar and flour. Blueberries are essential, but you can use 1 or 2 cups and combined with blackberries or strawberries. Add cinnamon and lemon juice. Also great to mix in peaches, nectarines etc. Mix well.
Place fruit on top of crust. Bake for 45 minutes.
