Broccoli Cauliflower Kugel


5 Eggs, whipped

½ C Mayonnaise

¼ C Minced Onion

1 T Kosher Salt

½ T Ground Pepper

6-8 Red Pepper Strips

¼ C Vegetable Oil

½ Head of Broccoli, broken into florets

½ Head of Cauliflower, in florets


Preheat oven to 350°F.

Boil Cauliflower until soft. Spray 8x8 pans with non-stick spray.

Whip eggs and add all other ingredients into eggs. Place all ingredients, including raw broccoli, in pan, making sure egg mixture covers as much of vegetables as possible. Lay red peppers on top.

Bake in 350° oven for 45-60 minutes, until golden brown.

Great for Passover too!
