Chopped Liver


1 lb. Chicken Livers

1t salt

3 medium onions, chopped

freshly ground pepper

1/4C Rendered Chicken fat

1 Pinch of Sugar

2 Hard Cooked Eggs


Wash livers and dry on paper towels. Saute onions in fat until brown. Turn heat down to medium and simmer onions and liver for 10 mins. Remove from heat.

Place all the ingredients in a food processor using a fine blade. Season with salt, pepper and sugar. Taste and adjust season if desired.

Serve in small scoops on lettuce leaves as a first course or spread on crackers or matzo.
