1 lb Chuck, cut in small pieces
2 C Medium Grain Rice (not instant)
4 bunches Fresh Cilantro
1/2 C Water
2 T Kosher Salt
1/2 C Vegetable Oil
Pre-heat over to 350F.
To prepare, wash the Cilantro very thoroughly and soak in water for about an hour. Then wash it again and cut it into very small pieces. Set aside.
Cut the onion into very small pieces and place in an oiled baking dish or foil pan.
Cut up meat into very small cubes and add to baking pan.
Add in 2 cups of well-washed rice into baking pan.
Add the cilantro and water, salt and oil. Mix well.
Cook covered for one hour. Stir well and cook for another hour.
