Vegan/Gluten Free Spaghetti & Meatballs
For the Meatballs:
1 lb Beyond Beef ground, thawed
1 C onion, diced small
1/4 C Vegan/Gluten Free Panko Crumbs
5 cloves garlic, minced
1/2 tsp black pepper
1/2 t salt
1/2 t Basil
1/2 t Paprika
28 oz jar spaghetti sauce
2 T Tomato Paste
1 lb Gluten Free &/or Vegan Spaghetti
fresh chopped parsley for garnish, optional
Preheat oven to 400°.
Combine meatball ingredients in a large bowl, using your hands to mix well. Roll into 20 golf-ball sized meatballs and line greased baking dish. Bake for 20 -25 minutes until lightly browned.
While meatballs are baking:
Prepare the pasta according to package directions. Drain and put in a serving dish or pan.
Heat spaghetti sauce and tomato paste in saucepan until hot. Pour on top of Spaghetti.
Place meatball in pasta and sauce, or on top. Garnish with parsley, if desired. Serve.
