2-3 Packages of Spinach – washed, cleaned and drained
1 small red onion, chopped
4 hard boiled eggs, chopped
2 handfuls of Bacos (V) or 6-8 Slices of Well Cooked Turkey Bacon, crumbled
1C Vegetable Oil
1/2C Cider or White Vinegar
1T Worcestershire Sauce
Pinch – Salt & Pepper
Mix Spinach and Onions
Mix dressing and refrigerate, overnight if possible.
Immediately before serving, add eggs and bacos to spinach and onions.
Shake and pour dressing over salad and serve.
Note: Bacos will expand and get soggy if mixed before ready to serve.
