Roasted Veal Breast


3 - 4 lb. Veal Breast

3 - 4 Carrots, Sliced

2 - 3 Medium Onions, Sliced

2 - 3 Celery Stalks, Sliced

Salt and Pepper


1C Vegetable Oil

2/3C Sugar

1/2C Cider Vinegar

1/2C Ketchup

Pinch – Salt & Pepper


Pre-heat oven to 350° F.

Mix marinade, if possible, the night before. Put veal breast roasting pan. Season with salt and pepper. Shake marinade well and pour over veal. Allow to marinate for as long as possible.

Chopp vegetables and place under veal.

Put veal in oven, covered, and cook for 1 hour. Remove cover and allow to cook until preferred doneness. Slice veal and serve with vegetables.
