Creamy Cucumber Salad

Ingredients:

2 English Cucumbers

1 Red Onion

Dressing:

1/3 cup + 2 Tbsp. Mayo

2 Tbsp. Cider Vinegar

1 Tbsp. Honey

1 tsp. Poppy Seeds

1/2 tsp. Salt

1/4 tsp. Pepper

Directions:

Cut cucumber in half the long way and scoop out the seeds with a spoon. Slice cucumber thinly on a diagonal. Thinly slice the red onion. Combine dressing ingredients and pour over cucumbers and onions before serving.
