Meat Lasagna

Ingredients: 

1 box of lasagna noodles or matzoh
3 lb chopped beef
1 T vegetable or olive oil
2 large onions - diced
1 large box mushrooms (family size) - diced
2 small/med eggplants or 1 large - diced
1 T cumin
1 T paprika
1 T garlic
1 t coriander
1 t turmeric
1 t black pepper
1/2 t salt
2 jars of marinara or pasta sauce (when jar is empty, fill it with about a quarter cup of water, shake it to get the sauce from the sides & pour that around the edges of your pan.

Directions:

Preheat oven to 350° F. 

Brown beef, drain & set aside.

Saute onions, mushrooms & eggplants in vegetable oil. 

Mix beef with sautéed veggies, then add all the spices.

Spray 9x13 pan with non-stick spray. Pour a thin layer of sauce on the bottom of your pan. Place uncooked noodles/matzoh to cover. 

Put a third/to a half of the mix, depending on how many layers you want. I usually do 2.

Pour a generous amount of sauce to cover the mix.

Top layer - pour sauce over the noodles/matzoh. I finish it with some breadcrumbs.

Bake covered for 90 minutes until it looks done, uncover for the last 15 minutes. Enjoy.
