Hearts of Palm Spaghetti Salad
DRESSING
3 tablespoons extra virgin olive oil
2 Tablespoons mayonnaise
2 Tablespoons lemon juice
1 Tablespoon large grain mustard
1 Tablespoon balsamic vinegar
Kosher salt and freshly ground pepper to taste
SALAD
1 can hearts of palm, spaghetti style
1 Cup grape tomatoes, cut in half
1/4 C red onion, finely diced
2 small cucumbers, diced
1 small broccoli head, broken into small florets
10-15. Fresh basil leaves, cut small
1-3 fresh parley sprigs, cut small
3-4 fresh Dill sprigs, cut small
In small container, Make dressing first, shake well until all combined and smooth. Set aside
In larger bowl, Make salad with remaining ingredients. Toss vegetables. Immediately before serving, pour dressing over salad and mix very well.
