Turkey Taco Salad


1 T Olive oil

2 C Onion, diced and divided

5-6 Garlic cloves, minced

1 Jalapeno pepper, minced

1 lb. Ground Turkey

2 T Taco seasoning (below)

10 oz can Diced Tomatoes with green chilies

6 C Romaine lettuce, shredded

1 Tomato, diced

1 Avocado, diced

1 T fresh cilantro, chopped

1 lime, sliced into wedges

Homemade Taco seasoning:

1T Chili Powder

1 T Ground Cumin

1 T Onion Powder

1 t Garlic Powder

1 T Paprika

1 T Oregano

1 ½ t Kosher Salt

1 ½ t Cayenne pepper (leave out for milder version)


Add the olive oil to a large skillet over medium high heat.

Add 1 cup diced onion, garlic and jalapeno, saute for 3-5 minutes.

Add the ground turkey and cook through. Make sure to break up any large pieces of meat.

Add the taco seasoning and diced tomatoes with green chilies. Reduce heat, cover and simmer for 5 minutes.

While meat is cooking, divide the lettuce between four bowls.

Top with the taco turkey, tomatoes, ¼ cup remaining diced onion, avocado and cilantro. Serve with a lime wedge for juicing over the salad
