Top of the Rib Roast
Ingredients:
2 Onions, Sliced
3 Cloves Garlic, crushed
1T Dijon Mustard
1t Salt
1t Chili Powder
1t Onion Powder
1t Thyme
1t Paprika
2T Olive Oil
1C Red Wine
1C Ketchup
Directions:
Mix dry ingredients with olive oil into a paste. In roasting pan, put onions in large roasting pan and cover with meat. Spread paste all over top of roast.
Wisk together ketchup and wine and pour over meat. Cover and cook at 325º for 3 hours. Slice when cool. Freezes well.
