Quick Tomato Soup
Ingredients:
1T Vegetable Oil
1 Large Onion
6-8 Garlic Cloves, Chopped
28oz Can of Crush Tomatoes
Quart of Vegetable Broth
Thyme Sprig
Fresh Basil
Salt
Pepper
Directions:
Heat oil in a large saucepan over medium-low heat. Sauté finely chopped onion and garlic until soft. Add crushed tomatoes, vegetable broth, and a sprig of thyme - simmer for 15 minutes. Remove thyme and season to taste with salt and fresh ground black pepper. Puree soup using an immersion blender. Stir in 1 1/2 cups of riced cauliflower and simmer for 5 to 7 minutes more, adjusting seasonings as needed. Serve hot with a garnish of chopped fresh basil.
