Lemon Chicken
Ingredients:
1 C Flour
2 t Salt
½ t Pepper
4 t Paprika
3 Cut-up Chickens
Olive Oil or Avocado Oil Spray
Lemon Sauce:
3 T Soy Sauce
1 t Salt and 1 t Pepper
¾ C Salad Oil
1 ½ C Lemon Juice
1/3 C Grated Lemon Peel
3 Garlic Cloves, minced
Sliced Lemons for Garnish
Directions:
Pre-heat oven to 400°.
Combine flour and seasoning; coat chicken pieces evenly. Arrange chicken, skin side down, in a single layer on shallow baking pan. Spray chicken with Olive or Avocado oil. Bake uncovered for 30 minutes.
Turn Chicken and then pour lemon sauce over chicken and lower heat to 350°. Add lemon garnish on top. Bake an additional 30 minutes or until chicken is golden brown and tender.
