1/2 cup chopped raw almonds
6 oz dark chocolate bar (at least 70% cocoa) broken into pieces
4 Tbsp unsweetened shredded coconut
In a microwave safe bowl, break up the chocolate bar into small pieces. Place in the microwave for 30 seconds on high. Remove bowl and stir the chocolate. Place the bowl back in the microwave and heat for another 30 seconds. Remove the bowl and stir the chocolate again until all the pieces have melted. Add in the almonds and coconut and stir to coat.
Prepare a baking sheet with a sheet of parchment paper. Using a tablespoon measure, scoop out the chocolate mixture and place in a mound on the parchment lined baking sheet. Repeat with the remaining chocolate mixture - 15-16 haystacks total. Place the baking sheet in the refrigerator for about an hour to let the mounds harden.
