Easy Cashew Chicken


1 1/2 lbs. Chicken Breast

12 oz. Broccoli Florets (fresh or frozen (defrosted)

2 Red Bell Peppers, diced

1/2 C Whole Cashews

1/2 C Teriyaki Sauce

3 Cups Cooked Rice


Pre-heat oven to 400 ° F. Line a sheet pan with foil and apply cooking spray.

Cut chicken into cubes. In a bowl, mix chicken, broccoli, peppers and cashews. Add in teriyaki sauce and mix, making sure all the chicken is well coated. Spread mixture onto the baking sheet and bake for 15 minutes, stirring once halfway through. Serve over rice.
