Ingredients:
1 Small Can Sliced Carrots
1 C Quinoa, prepared according to directions to make 2 Cups of grain
1/4 cup Chopped Red Onion (or more if desired)
Dressing:
1 teaspoon Course Dijon Mustard
1 Tablespoon Chopped Garlic
2 teaspoon Lemon Juice
1/2 teaspoon Kosher Salt
1/4 teaspoon Black Pepper
1/3 C Extra Virgin Olive Oil
Make quinoa according to directions on package. Add Carrots and Onions. Set aside. In separate bowl, mix dressing ingredients and whisk. Pour over quinoa blend and mix well. Serve cold.
