Melting Chicken


Ingredients:

 2 lbs boneless chicken thighs (or any cut) 

 1 tsp salt

 2 tsp smoked paprika

 2 tsp onion powder

 2 tsp garlic powder

 2 tsp dried oregano

 1 tsp black pepper

 2–3 tbsp olive oil

 ½ yellow onion, thinly sliced

 6-8 whole garlic cloves

 2 cups chicken broth

 

Directions: 

Preheat oven to 350°F.  Cover a baking dish with foil and spray with non-stick spray.

Slice onion and place in baking dish. Add garlic cloves. 

 Mix all the dry spices in a small bowl. 

 Lay chicken on top of onions and garlic. Season the chicken, flip over and season the other side. Drizzle with olive oil. 

 Pour broth around the chicken (not over top).

 Cover tightly and bake 1 hour 30 minutes.

 Serve immediately.  Enjoy!
