Date Roasted Squash

Ingredients

3 small butternut squashes, washed and dried.

1 t kosher salt

1/2 t black pepper

2 T Silan/date syrup

3 T extra virgin olive oil


Herb mixture

2-3 sprigs rosemary leaves, finely chopped

6-7 springs parsley, finely chopped

1/4 C walnuts, finely chopped

Put all the ingredients in a bowl and mix it.


Directions

1. Preheat the oven to 425°F

2. Cut the squashes on the long side. Remove the stem and seeds, then cut the squash to 1 inch slices.

3. On a baking pan with parchment paper place the squash slices in one layer.

4. Season with the salt, pepper, olive oil, and drizzle date syrup over all of the squash.

5. Bake for 25 minutes, then broil for 5-7 minutes to get a nice golden color. 

6. Plate immediately. 

7. Sprinkle the herb mixture on top.

8. Garnish with a touch of flaky salt and a drizzle of a date syrup, if desired.
