Auntie Annie's Passover Carrot Cake

1 pound carrots, grated

¾ cups matza cake meal (or spelt cake meal)

¼ cup potato starch

½ tsp baking powder

½ tsp baking soda

1 cup brown sugar

¾ cup oil (I use canola oil)

2 eggs

1 tbsp lemon juice

1 tbsp water

1 tsp salt


Grate carrots and set aside in a separate bowl.

In a food processor, mix the remaining ingredients together. 

In food processor, mix all of the ingredients, except carrots. After well blended, fold in carrots.  Pour batter in an square (8' x8") or oblong (9"x13") pan. 

Bake 1 hour at 350°F until done.  Freezes well.
