Savory Vegetable Chicken


3-4 lbs. Chicken Pieces

1 lb. Carrots, colorful if possible, Chopped

3-4 Medium Idaho Potatoes, Chopped

2-3 Medium Onions, Chopped

4-6 Garlic Cloves

Olive Oil, Salt, Pepper, Onion Powder, Paprika


Pre-heat oven to 350F.

Drizzle olive oil in the bottom of a large baking dish. After cutting up all the vegetables, lay them in the dish. Season vegetables with salt and pepper. Add chicken pieces on top. Season chicken with salt, pepper, onion powder with paprika going on last. Drizzle olive oil on top of chicken.

Cover tightly with foil, creating a tent-like structure. Bake for 60-75 minutes. Loosen foil and bake for an addition 30-40 minutes.
