Hearts of Palm Salad


3 C Cherry Tomatoes, sliced in halves or quarters

2 Small Ripe Avocade, sliced

4-5 Mini Cucumbers or 1 large English Cucumber, sliced thinly and in half moon shapes

1 15 oz can Hearts of Palm - Sliced or sliced into 1/4 inch rings

1 Small Red Onion, thinly sliced

1/4 C Vegetable Oil

1 1/2 T Red Wine Vinegar

1 t White Sugar

1 t Garlic Powder

1 t Kosher Salt

1/2 t Black Pepper


In a large bowl add sliced tomatoes, avocado, cucumbers, drained and dried hearts of palm, and red onion. Blend well making sure the avocado slices are separated.

In small bowl, whisk together the oil, vinegar, sugar, garlic salt and pepper.

Pour dressing over vegetables and allow to marinate, if possible.

Serve cold.
