Apple Nut Cake

Ingredients:

BATTER:

6 Large Eggs

1 C Vegetable Oil

2 T Potato Starch

2 C White Sugar

2 C Matzo Meal

Pinch of Salt

APPLE MIXTURE:

4 lb. Macintosh Apples - peeled, cored, and sliced

3/4 C White Sugar

2 t Cinnamon

Juice of One Lemon

TOPPING:

1/2 C Nuts

1 C White Sugar

1 t Cinnamon

Directions:

Preheat oven to 350, grease oblong loaf pan.

Pour in 1/2 the batter then spread apple mixture over it and cover with the rest of the batter. Sprinkle topping on top of the cake.

Bake for 75 minutes.
