Blueberry Muffins


2 C All Purpose Flour

1/2 C Sugar

3 t Baking Powder

1/2 t Salt

1 1/2 t Grated Orange Rind

1 C Milk

1/3 C Vegetable Oil

1 Egg

1 C Fresh Blueberries

1/2 C Chopped Nuts

2 T Sugar

1/8 t Cinnamon


Pre-heat oven to 400.

Sift Flour, 1/2 C Sugar, Baking Powder and Salt. Stir in Orange Rind. In separate bowl, combine Milk, Oil, and Egg. Add to Flour mixture stirring only until dry ingredients are moistened. Stir in Blueberries and nuts. Spoon into 12 greased muffins tins or paper muffin cups. Combine Cinnamon and 2 T Sugar. Sprinkle over top of batter. Bake for 400 degrees for 20-25 minutes.
